
Satisfying Weeknight Pasta
This recipe is a continuation of my series of easy weeknight, fast yet good food. It's easy to take this base recipe and jazz it up to create something great. But as it stands its good food fast and easy as is. There are many options to up the flavor. For instance add in dried Italian herbs simmer phase. Or add fresh chopped garlic about a minute before deglazing. This is a great base to expand on.

Ingredients
Main Ingredients
- 8 oz spaghetti noodles (dry)
- 1 lbs Italian sausage
- 24 oz Pasta sauce
- 2 tbsp extra virgin olive oil
Optional
- ½ cups red wine
- 4 oz parmesan cheese
Instructions
Prepare the spaghetti noodles as directed.
After the noddles have been removed from the pot return it to a medium heat and add the olive oil. Extra virgin olive oil has a smaller smoke point so if you raise the temperature you risk creating smoke.
After a couple minutes add the Italian sausage. You'll want to leave it on it's side for up to 6 minutes while it browns.

Break up the sausage and let it cook for about another 6 minutes. You should see bits of meat stuck to the bottom of the pan.

If using red wine pour it in now. If not put about half a cup of the tomato sauce in instead.

Pro Tip
This technique is called deglazing
After a couple of minutes clean the bottom of the pan with a latex or wooden spatula.
Add the rest of the Tomato sauce and let it simmer for about 10 minutes.

It's now ready to serve. To make it as easy as possible I simply put the noddles into the mixture. You may have a better experience putting the noodles on a plate and topping it with the sauce.

Add Parmesan cheese at the end. Enjoy!
