Creamy Spinach
This creamy side dish combines spinach and onions in a creamy sauce for a decadent yet nutritious side. This version uses only one pot and cuts unnecessary steps to help with those weeknights when you want something really great that doesn't take so long.
Ingredients
- 10 oz Fresh spinach
- 1 medium Onion, chopped
- 2 tbsp Flour
- 3 slices Bacon
- 0.5 tbsp Butter
- 1 cup Half and half
- 1 pinch Fresh nutmeg
- 1 pinch Salt
Instructions
- Because this recipe uses a roux chop the onion and have the half and half ready to pour.
- In a skillet add the butter and bacon. Cook until the bacon is crispy
- Add in the flour to the bacon and stir constantly to avoid burning the roux. After two minutes add the onions
- Continue to stir for a few more minutes to soften the onions. Then add in the half and half. Continue to stir for a couple more minutes to heat the mixture.
- Add in the nutmeg.
- Add the spinach in a handful at a time to avoid overloading the skillet. As it shrinks continue adding until all the spinach is incorporated.
- Cook for another 5 minutes after all of the spinach is added.
- Add salt to taste. Server hot.
