Here is an old recipe that's been passed down for Lefsa. Careful with the image of the recipe, some important information is left out!

  1. Boil the potatoes with skin on for 25 minutes then put in a strainer.
  2. If boiled you can spray cool water on the potatoes and hand peel. Push through a Potato ricer and let cool.
  3. Mix all ingredients together in a bowl.
  4. Generously sprinkle flour on a surface (or pastry cloth) and roll very thin.Do this one at a time. There is time to roll a second while the first is cooking.
  5. Cook on a griddle at 450F.
  6. Place between towels to keep moist until ready to use or refrigerate.
