Minnesota Lefsa (Lefse)
Here is an old recipe that's been passed down for Lefsa. Careful with the image of the recipe, some important information is left out!
Ingredients
- 3 cups Potatoes, riced
- 3 tbsp Butter, melted
- 1 tbsp sugar
- 1 tsp salt
- 1.25 cups Flour
- 2 tbsp Heavy Cream
- 1.5 cups Flour
Instructions
- Boil the potatoes with skin on for 25 minutes then put in a strainer.
- If boiled you can spray cool water on the potatoes and hand peel. Push through a Potato ricer and let cool.
- Mix all ingredients together in a bowl.
- Generously sprinkle flour on a surface (or pastry cloth) and roll very thin.Do this one at a time. There is time to roll a second while the first is cooking.
- Cook on a griddle at 450F.
- Place between towels to keep moist until ready to use or refrigerate.
