Ingredients

Main Ingredients

  • 3 cups Potatoes (riced)

    Russets are recommended.

  • 3 tbsp Butter (melted)
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 ¼ cups Flour
  • 2 tbsp Heavy Cream

For rolling out the dough

  • 1 ½ cups Flour

Boil the potatoes with skin on for 25 minutes then put in a strainer.

Pro Tip

Alternatively you can bake them at 400F for about an hour. This mnethod reduces the moisture in the potatoes.

If boiled you can spray cool water on the potatoes and hand peel. Push through a Potato ricer and let cool.

Mix all ingredients together in a bowl.

Pro Tip

The potatoes must be cooled or the steam will interfere with this step.

Generously sprinkle flour on a surface (or pastry cloth) and roll very thin.Do this one at a time. There is time to roll a second while the first is cooking.

Cook on a griddle at 450F.

Place between towels to keep moist until ready to use or refrigerate.
